Valentine`s Day special, Red velvet cake | വാലെന്റൈൻസ് ഡേ സ്പെഷ്യൽ, റെഡ് വെൽവെറ്റ് കേക്ക്

Happy Valentines day. Please see recipe of Red Velvet cake below:-


Sugar - 2 cup
Eggs - 3
Vanilla essence - 2~5 spoons
Vegetable oil - Half a cup (we used canola oil)
Butter milk - Half a cup
Edible red colour.
All purpose flour - 2 cup
Baking powder (1 sppoon) - 4 gms
Baking soda - 1 spoon
Cocoa powder - 2 spoon
Salt - Half a spoon
Lemon juice - 1 spoon


Preheat the rice cooker. Grease and line the cooker.
Mix well butter milk, vanilla and red colour.
Separate egg white and yellow.
Put all the egg whites and sugar into a large mixing bowl and beat with a hand-held mixer or electric mixer until the mixture become noticeably lighter in color. Then add yolk of egg and beat again. Add previously prepared coloured buttermilk mixture into this and beat.
Add 1 spoon lemon juice in to this mixture.

Sift 3 times the dry ingredients (flour, baking powder, baking soda, cocoa and salt) into a medium bowl and set aside.

Combine the wet ingredients with the dry ingredients a little at a time, mixing after each addition, just until combined. (Batter will be thin)
Add vegetable oil and mix.
Transfer to the prepared tin (cooker) and bake for 25 minutes until a skewer inserted into the centre comes out clean (3 times rice cooking mode).
For best results leave the cake on the counter for 6~8 hours before using. This will reduce the amount of crumbling when you go ahead to split the cake in two horizontal layers.
Same recipe can be used for bake in oven. Use 20 cm cake tin and bake for 25 mnts in 170°c.
