മലയാളിയുടെ സ്വന്തം ഇഡ്ഡലിപാത്രത്തിൽ ഒരു ചോക്ലേറ്റ് സ്റ്റീമു കേക്ക് | Chocolate steam cake

This is a quick and easy, Sponge cake recipe without using oven and Rice cooker. This may be helpful even for bachelors who do not want to follow complex recipes and those which demands longer cooking time. Please check detailed recipes below:-

Chocolate Steam Cake Recipe
Prep Time: 10minutes
Cook Time: 25-35Minutes

Ingredients

Sugar - 1 cup
Eggs - 3
Vanilla essence - 3 teaspoons
Unsalted butter - 10 gms
Milk - 15 ml
All purpose flour - 3/4 cup
Cocoa powder - 1/4 cup
Baking powder - 4g (1 teaspoon)

Steps

Preheat the vessel for steaming. Grease and line the tin.
Separate egg white and yellow.
Put all the egg whites and sugar into a large mixing bowl and beat with a hand-held mixer or electric mixer until ribbon stage. The mixture should be noticeably lighter in color. Then add yellow parts of egg and beat again. Stir in 3 teaspoons of vanilla extract.
Sift the flour, cocoa powder and baking powder into a medium bowl and set aside. Now add this dry into the whipped eggs in halves, carefully folding with a spatula. Do not overfold or the cake will be tough. Just fold enough to incorporate the flour.

Combine the melted butter and milk in a cup and mix well. Add 2 teaspoons of batter into butter mixture and stir well. Add this mixture into the batter and carefully fold with a spatula until no streaks of liquid are seen.

Transfer the batter to the prepared tin. Cover the tin with aluminum foil and steam bake for 25 mnts until a skewer inserted into the centre comes out clean (After 25mnts check with skewer and if not cooked please cook for another 10mnts).
For best results leave the cake on the counter for 6-8 hours before using in a cake. This will reduce the amount of crumbling when you go ahead to split the cake layer in two, horizontally.
Same recipe can be used for bake in oven. Use 18cm cake tin and bake for 25mnts in 170°c.

Vanilla Fresh Cream Frosting Recipe

Ingredients

Fresh cream - 2 cups
Powdered sugar - 3 spoons
Vanilla essence - 2 spoons

Steps

Chill the bowl.
Take ice cubes in a big bowl.
The chilled bowl should be inserted into the big bowl with ice cubes.
Pour the heavy cream, sugar and vanilla into the chilled bowl and whisk on medium-high speed until it just starts to thicken and stiff peaks form (the cream will stand up straight when the whisk is raised).
