Sponge cake easy recipe | ഞൊടിയിടയിൽ സ്പോഞ്ചു കേക്കുണ്ടാക്കാം!

This is a quick and easy, Sponge cake recipe using Rice cooker. This may be helpful for bachelors who do not want to follow complex recipes and those which demands longer cooking time. Please check detailed recipes below:-

Vanilla Sponge Cake Recipe

Preparation Time: 10 minutes

Cooking Time: 20-25 Minutes

Ingredients

Sugar - 1 cup
Eggs -

3

Vanilla essence - 3 teaspoons
Unsalted butter
- 10 gms (2)
Milk - 15 ml
All purpose flour - 1 cup

Baking powder - 4g

Steps

Preheat the rice cooker with 10 gms of unsalted butter. Grease and line the cooker.

Separate egg white and yolk.

Put all the egg whites and sugar into a large mixing bowl and beat with a hand-held mixer or electric mixer until ribbon stage. The mixture should be noticeably lighter in color.
Then add yolks of egg and beat again.
Stir in 3 teaspoons of vanilla extract.

Sift the flour and baking powder into a medium bowl and set aside.
Now add the flour into the whipped eggs in halves, carefully folding with a spatula.
Combine the melted butter and milk in a cup and mix well or place the cup with butter and milk in boiled water for sometime and mix well.
Add 2 teaspoons of batter into butter mixture and stir well.
Add this mixture into the batter and carefully fold with a spatula until no streaks of liquid are seen.

Transfer to the prepared rice cooker and cook normally like that for rice. Repeat this 3 times. After third time, check a skewer inserted into the centre comes out clean.

Vanilla Fresh Cream Frosting Recipe

Ingredients

Fresh cream - 2 cups
Powdered sugar - 3 spoons
Vanilla essence - 2 spoons

Steps

Chill the bowl.
Take ice cubes in a big bowl.
The chilled bowl should be inserted into the big bowl with ice cubes.
Pour the heavy cream, sugar and vanilla into the chilled bowl and whisk on medium-high speed until it just starts to thicken and stiff peaks form (the cream will stand up straight when the whisk is raised).
